  1. Cortar el salmón en taquitos pequeños y poner a marinar en salsa de soja, el jugo de 1/2 lima y un poco de jengibre molido.
  2. Limpiar varias veces el arroz, para quitar el almidón, hasta que se quede el agua transparente. Dejar reposar el arroz 30 min.
  3. Poner el arroz en un cazo, añadirle los 2 vasos de agua y tapar. Poner a cocer a fuego fuerte, hasta que se ponga a hervir y esperar 2min. Pasado ese tiempo, bajar el fuego al mínimo y esperar 13min. Apagar y dejar reposar, sin quitar la tapa, 10min. Escurrir bajo agua fría.
  4. Mientras reposa el arroz, vamos preparando el susitshu: en un cuenco añadimos el vinagre de arroz, el azúcar y la sal; remover bien hasta deshacer el azúcar y la sal. Después, mezclar el susitshu con el arroz y reservar.
  5. Cortar los palitos de cangrejo y el aguacate en láminas o taquitos.
  6. Cortar la lámina de alga nori en tiritas muy finas y remojar en una cuchara con soja y ajonjolí.
  7. Escurrir el salmón marinado y apartarlo con un poco de ajonjolí.
  8. Ya tenemos todo preparado para emplatar: poner en la base del cuenco el arroz y encima el resto de los ingredientes jugando con los colores.
