- 2 cucharadas harina de avena o garbanzos

- Corta la coliflor muy fina. Colócala en una sartén apta para horno, con 125ml de agua y cocina a fuego medio hasta que la mayor parte del líquido haya sido absorbido. Esto te llevará entorno a 5 - 8 minutos.
- A continuación pásalo por un tamizados fino para drenar todo el líquido. Presiona ligeramente para eliminar cualquier exceso de líquido
- En un procesador de alimentos o a mano, mezcla las almendras molidas y la harina de garbanzos para eliminar los grumos. Si quedan muchos grumos, pásalo por un colador.
- Agrega el huevo y el aceite de oliva virgen extra al recipiente o en el procesador y mezcla hasta que quede suave. Seguidamente añade la coliflor y mezcla bien. Hasta que tenga un aspecto de pasta. Añadidos sal y pimienta al gusto
- Vuelve a poner la sartén a fuego medio con aceite de oliva y, cuando esté caliente, agrega la mezcla de coliflor y extiéndela sobre la base con la ayuda de una cuchara, dejando aproximadamente un centímetro por los lados de la sartén. Debe quedar no demasiado gruesa pero tampoco fina para que no se rompa.
- Cocina durante unos 5 minutos hasta que se dore ligeramente y luego introdúcela en el horno durante aproximadamente 10-12 minutos. Previamente precalentando a 200º y mantenemos esa temperatura.
- Transcurrido este tiempo, abrimos el horno y ponemos sobre la base la salsa de tomate (intentad que esté espesa para que humedezca demasiado la base), el mozzarella, champis, jamón York y tomate en rodajas. O los ingredientes que os apetezcan. Y volvemos a introducir al horno otros 5-7 minutos.
